Delicious Chicken Pasta
Ingredients:
- 1lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 cup chopped onion
- 1 cup chopped bell pepper
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz pasta
- 1/4 cup grated Parmesan cheese, optional
Instructions:
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove chicken from skillet and set aside.
- Reduce heat to medium and add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender, about 5-7 minutes.
- Add diced tomatoes, basil, oregano, salt, and black pepper to the skillet. Bring mixture to a simmer and cook for about 10 minutes.
- Slice chicken and return to the skillet. Cook until chicken is heated through, about 5 minutes.
- Serve chicken and sauce over cooked pasta. Sprinkle with grated Parmesan cheese, if desired.
Tomato and Spinach Chicken Pasta
Ingredients:
- 8 oz pasta
